Burkanmaize, or Carrot Bread, has become a rather popular specialty bread in Latvia. It is based on the traditional Latvian dark rye bread (rupjmaize), is handmade, baked in wood-fired ovens, but it has a milder flavor and a moister, softer consistency. The bakery and ingredients are certified by the National Environment and Health Center of Latvia.
